Pre-heat oven to 200 degrees Celsius.
Poke 3 or 4 sets of holes in potatoes with fork.
Microwave potatoes on high for 5 minutes.
Wrap potatoes individually in foil wrap, shiny side facing in.
Place in oven (or office pie warmer) for 60 minutes.
Finely chop spring onion and red onion.
Cut bacon rashes in half and chop white onion into strips.
Put bacon and white onion into pan (or office sandwich press) and cook for 20 minutes.
Finely dice bacon rashes.
Remove potatoes from oven, unwrap and chop in half. Each half should also be broken open a little to allow ingredients to settle in.
Top with generous serving of garlic butter followed by bacon, onions and cheese.
Microwave on high for 2 minutes to melt cheese. Top with sour cream and coleslaw, enjoy 🙂
