Ingredients
Ribs
  • 2Racks Pork Spare Ribs
  • 2Cups Kansas City Rib SauceSome for marinating and some to serve with ribs once cooked.
Sweet Potato Mash
  • 1Dash Milk
  • 2tbsp garlic butter
  • 1 Large Sweet Potato
  • Sriracha Chilli SauceOptional: To give the sweet potato mash a bit of a kick!
Instructions
  1. We recommend marinating your ribs overnight in your desired sauce, we used this Kansas City Rib Sauce, we added a little more of the cayenne pepper for a bit more kick. Cover your ribs in a even coating of sauce and store in a sealed container overnight in the fridge.
  2. Set your toaster oven to 140°C.
  3. While oven is heating up, add a little extra of the sauce to the ribs and wrap your ribs in foil and place on the cooking tray.
  4. Once oven is at correct temp, place tray and ribs in oven and set cooking.
  5. After 1 hour of cooking, check ribs to make sure there is still moisture, add extra sauce if required.
  6. After another hour, unwrap the foil and up the temp to 200°C and continue cooking for an additional 20-30 minutes or until sauce is browned.
  7. During the last 20-30 minutes of cooking. Cut up your sweet potato and add to a microwave safe dish, adding a cup of boiling water.
  8. Place dish in microwave and cook on high for 5 minutes, stir when finished and cook for an additional 5 minutes.
  9. Drain excess water from sweet potatoes once finished cooking, add the garlic butter and a dash of milk and mash using a potato masher utensil or a fork 😀 Once mashed cover and set aside. Optional: Add a squirt or two of Sriracha Chilli Sauce for a bit of a chilli kick!
  10. Once ribs are ready, serve with some extra of the Kansas City Rib Sauce and/or Sriracha Chilli Sauce. Eat and enjoy. Recommend keeping some paper towels on hand for wiping those fingers while eating the ribs 😀
