Whole Roast Chicken
Traditional roast chicken with roasted potato and carrot, served with gravy. Cooked in a standard size toaster oven.

Ingredients
  • 1 Whole Chicken
  • 2 potato
  • 2 carrot
  • 2tbsp olive oil
  • salt
  • pepper
  • olive oil
  • 2rasher bacon
Instructions
  1. Preheat your toaster oven to around 180 degrees Celsius.
  2. Cut up potato and carrot and put in suitable size bowl/container. Add olive oil, salt and pepper to taste. Stir/mix to cover vegetables with oil/salt/pepper. Set aside while preparing the chicken.
  3. Rub some olive oil into skin of chicken, coat with salt and pepper to taste.
  4. Cooking times will vary depending on size of chicken and the effectiveness of your toaster oven. We cooked our chicken for around 2.5 hours in total.
  5. Start cooking your chicken in suitable tray, leaving room to add vegetables.
  6. About half way through cooking, add your vegetables to toaster oven.
  7. 3/4 of the way through cooking, add bacon rashers to top of chicken. Continue cooking.
  8. Once cooked serve on with a generous amount of gravy. We just used a Masterfoods ready to serve gravy which we heated up in the microwave, you could easily create your own gravy from the juices left in the cooking tray.
