Big Bertha Brekkie Burrito

Everybody loves a burrito! We LOVE bacon and eggs! It was just obvious that we should cook our own, thus the Big Bertha Brekkie Burrito was born!

This was our take on the ever popular breakfast burrito; bacon, eggs, cheese, and an assortment of fresh ingredients wrapped and and toasted in some multigrain tortilla bread…my mouth is watering just writing about it!

Ingredients
  • 6 Multi Grain Tortilla
  • 6 eggs
  • 3 rashers Middle Bacon
  • 3 slices Gouda Cheese
  • 1 Half Green Capsicum
  • 1 Half red onion
  • 1 Half avocado
  • 1 tomato
  • 1 dash Milk
  • Sriracha Chilli Sauce
  • BBQ Sauce
Instructions
  1. Turn on your sandwich press/grill to warm up. Then start slicing up your capsicum, red onion, avocado, tomato and cheese.
  2. Put your bacon on to cook while continuing.
  3. While your bacon is cooking, add your 6 eggs and a dash of milk into a large microwave safe bowl. Place bowl in microwave and cook in 1 minute intervals until cooked, stirring after each interval. Cooking times may vary between each microwave, ours took about 5 minutes. These will turn out as a quick, easy office cooking style scrabbled eggs. Sorry we didn't get a photo of the cooked eggs.
  4. Put 3 tortillas on plates and start to layer on your ingredients. We started with the bacon, added the egg and then the fresh ingredients.
  5. We added Sriracha and BBQ sauces to our burritos, but you could add any of your favourite toppings or sauces.
  6. Because our burritos are so large (aka Big Bertha), we needed to use two tortillas per burrito to get the wrapped up properly. Once rolled/wrapped, place the burritos on your sandwich press to toast up for about 5 minutes.
  7. Serve up and EAT!
  8. NOM NOM NOM!
