Eggslut Sandwich

Like a lot of people, I watch a lot of Youtube videos. One day I stumbled across a Munchies episode featuring Alvin Cailan, owner of LA restaurant Eggslut. He was cooking up his ‘Ultimate Egglut Sandwich’. This sandwich looked so so good, we just had to try it for ourselves.
Alvin’s recipe calls for fried spam (or pork loin chop), egg and shallots on a sweet Hawaiian dinner rolls served with Sriracha mayo. We altered the recipe a little, we decided to use ham steaks rather than spam, and also substituted the sweet dinner rolls with a plain burger bun. I think a English muffins or Turkish bread rolls would work well also.

Ingredients
  • 3 Ham steak
  • 3 Shallots
  • 4 eggs 3 to fry, 1 to use when coating ham steaks with breadcrumbs.
  • 3 Tbps Sriracha Chilli Sauce Original Huy Fong preferred 😀
  • 6 Tbps Whole egg mayonnaise
  • 3 Bread rolls
  • Breadcrumbs To coat the ham steaks.
  • butter
Instructions
  1. Plug in your sandwich press to warm up. Slice up your shallots and set aside.
  2. Crack one egg into a bowl/plate and beat with a whisk/fork.
  3. Spread breadcrumbs out on a plate.
  4. Dip ham steak into beaten egg.
  5. Then dip/coat ham steak in breadcrumbs.
  6. Place ham steaks onto sandwich press and allow cook until browned.
  7. While ham steaks are cooking, cut and butter your rolls!
  8. Once ham steaks are brown, remove and place eggs onto sandwich press to cook (be sure to break yoke), also place bread rolls buttered side down to toast. We used two sandwich presses to save a bit of time.
  9. Perfectly cooked eggs!
  10. Once all cooked, time to assemble your EggSlut sandwich. Start with the Sriracha mayo on the roll, add your ham steak, then egg and top with shallots. Add extra Sriracha sauce to taste. ENJOY!
